I was brought up as a beans-come-in-a-can kind of person. You pop the lid, drain the juice, and the party’s started. But, as I’ve been educating myself on healthy, planet-positive eating, I’ve learned there is a better way to eat beans. Buy them dry (in bulk) and soak them before cooking. Yes, it’s definitely more time intensive but it’s worth it.

Two reasons why it’s worth it. The first is that, with canned goods in general, there is a high risk of being exposed to BPA, which can disrupt your endocrine system and lead to cancer and heart disease. We don’t want any of that in our food. The second reason is that soaking your beans is the nicest gift you can give your digestive system.

All grains and legumes contain phytic acid, basically keeping them from sprouting prematurely. Phytic acid is super hard for your body to digest, which often leads to inflammation and (yes!) gas.  So, in nature, the rain triggers germination of the seed/grain/bean and releases phystase, which breaks down the phytic acid. So, by soaking your beans (even for just a 1-2 hours), you are doing your body a huge favor!
